88–90°C — slightly under a full boil, so the more delicate flowers don't turn bitter. Steep for 7 minutes. Dim the lights while you wait, if you can. It sounds like a small thing, but it helps more than people expect.

Keep the pouch sealed, away from sunlight and heat, in a cool, dry cupboard.
